Het betekend letterlijk gekookte room. Het is een toetje dat smelt op je tong en je eigenlijk er alleen nog maar meer van wilt.&nbsp;Het is de kunst om niet teveel gelatine te gebruiken. Na heel wat panna cotta te hebben gegeten en het experimenteren met verschillende hoeveelheden van de gelatine is uiteindelijk onderstaand recept ontstaan.<\/p>\n\n\n\n<p>Over het ontstaan van panna cotta heb ik verschillende verhalen gelezen, van een Hongaarse vrouw die het voor het eerst maakte in de regio Langhe (Pi\u00ebmonte), tot de voorloper van de huidige panna cotta vanuit Perzische oorsprong , met de naam muhallebi.<\/p>\n\n\n\n<p>Wat nu waar is weet ik niet, maar het is en blijft een heerlijk toetje waar vele mensen verzot op zijn. Panna cotta komt rond de middeleeuwen veel voor in de regio Pi\u00ebmonte, echter wordt het recept pas rond 1960, voor het eerst vermeld in kookboeken.&nbsp; Doordat er in die regio een overvloed aan vee en dus ook aan melk en room was, werd dit een traditioneel gerecht. In de arme gezinnen werd het zonder suiker gemaakt, omdat dit voor die tijd een erg duur ingredi\u00ebnt was.<\/p>\n\n\n\n<p>Van oudsher werd de panna cotta gemaakt door de room, suiker en visgraten te laten sudderen. De visgraten diende als bindmiddel. Je kunt vari\u00ebren wat betreft opdienen. Ik heb deze met timbaaltjes gemaakt, maar je als het storten te moeilijk vindt, kun het ook opdienen in een mooi glas.
