Champignons a l\u2019escargots<\/strong> is een klassieke bereiding van champignons. De rijke, romige smaak van deze amuse of voorgerecht, dat meestal met getoast brood geserveerd wordt, vraagt om een wijn die als het ware een tegenhanger vormt maar tegelijkertijd voldoende body heeft. <\/p>\n\n\n\n

De oorsprong van het gerecht ligt in de Bourgogne, een streek in Frankrijk die bekendstaat om haar rijke culinaire tradities. Escargots \u00e0 la Bourguignonne<\/em> (slakken in kruidenboter) zijn een echte klassieker in de Franse keuken.<\/p>\n\n\n\n

Het gerechtje is eenvoudig te maken, vraagt geen ingewikkelde technieken, maar levert w\u00e9l een verrassend resultaat.<\/p>\n\n\n\n

De wijn Macon-Solutr\u00e9 2021 van Domaine Auvigues<\/a><\/strong> pakt dit heel mooi op. Deze wijn van de Chardonnaydruif komt uit het zuidelijkste deel van de Bourgogne en heeft een \u2018frisse \u2013 rijke smaak\u2019. De zuren zijn een mooie tegenhanger voor het smaakvullende gerecht. De exotisch-ananas zwoele mondbeleving, zo kenmerkend voor Chardonnay, maakt de combinatie elegant.\u00a0<\/p>\n\n\n\n

Voor de rode wijn liefhebbers hebben we de Regnie \u2018Agath de Blues\u2019 2021 van Domaine Bonne Tonne<\/a> <\/strong>uit de Beaujolais gematched. Dit wijngebied sluit meteen ten zuiden aan de M\u00e2connais aan. Een Beaujolais wordt gemaakt van de Gamay-druif. De wijn komt in eerste instantie vol bessig over. Rijk, wat aards, mineralig en naar kersen smakend in de afdronk. Heel mooi vallen de smaak van deze puur agrobiologische wijn en het gerecht in\u00e9\u00e9n.<\/p>\n\n\n\n
