Onze koelkast was bijna leeg, dus ik ging op zoek naar inspiratie voor het avondeten, gewoon even kijken wat er nog te vinden was. In de groentelade vond ik een handjevol shiitakes en champignons die er nog prima uitzagen, en in het kruidenlaatje lag nog een bolletje zwarte knoflook.<\/p>\n\n\n\n

Omdat de Italiaanse keuken mijn favoriet is, wilde ik er een Italiaanse pasta mee maken. De eenvoud, de pure smaken en het gebruik van goede ingredi\u00ebnten spreken me enorm aan. Met die gedachte besloot ik een pasta te maken waarin de zwarte knoflook centraal zou staan. Geen overdaad aan ingredi\u00ebnten, maar juist de focus op de diepe, bijna balsamico-achtige smaak van deze bijzondere knoflook.<\/p>\n\n\n\n

Zwarte knoflook is echt iets fascinerends. Het is gewone knoflook die langdurig wordt gefermenteerd onder gecontroleerde omstandigheden, warmte en vochtigheid, waardoor de teentjes langzaam zwart kleuren en hun scherpe smaak inruilen voor zacht en zoet.<\/p>\n\n\n\n

Onlangs zag ik in een aflevering van Gort over de Grens<\/em>, waarin Ilja Gort in Spanje was, een prachtig verhaal over zwarte knoflook. Hij bezocht een producent die het hele proces uitlegde, van verse knoflook tot het eindproduct. Wat kan die man het toch fantastisch overbrengen. Zijn enthousiasme is aanstekelijk en hij weet telkens weer zijn passie voor smaak, traditie en ambacht zo mooi te vertalen naar beeld en verhaal. Ik kijk graag naar zijn programma, ik word daar iedere keer weer blij van.<\/p>\n\n\n\n

Met het verhaal van Ilja in mijn achterhoofd ben ik gaan koken. Het fijne aan zwarte knoflook is dat je er geen knoflookadem van krijgt \u00e9n dat hij zich heel gemakkelijk laat verwerken. De zachte smaak geeft het gerecht bovendien iets warms en aards.<\/p>\n\n\n\n

Een perfecte wijn om hier bij te combineren is de Nebbiolo Langhe DOC<\/a>, van het wijnhuis BAVA. De aardse fruittoon van vlier en braam van de wijn passen heel mooi bij dit gerecht.<\/p>\n\n\n\n
